Graham Crust:
2 cups Crushed Graham Crackers.
3 tablespoon Sugar.
1/2 stick Butter, melted.
Cheesecake Filling:
2 (8oz) Cream Cheese.
1 cup All Purpose Cream or Heavy Cream.
1 cup Sugar.
2 Eggs.
1 teaspoon Vanilla.
1 tablespoon Lemon Juice.
1/2 teaspoon Salt.
Topping:
1 21oz can Blueberry Pie Filling.

Ingredients:
2 cups all purpose flour _ 18.
2 tsp baking powder _ 2.
1/2 cup (112g) softened butter, unsalted _ 22.
1/3 cup sugar _ 4.
2 eggs _ 12.
1 can (300mL) condensed milk _ 32.
2 tsp vanilla _ 3.
1 cup (100g) grated cheese _ 42 (165g).
1/2 cup grated cheese for topping.
TOTAL _ 145 pesos (makes 12 pcs).

Cheesecake has always been my weakness. Using Marias biscuit/cookies takes me back to my childhood days in Belize..
Easy Mini Cheesecakes.

Crust:
1 pkg. (4.9 oz) Marias biscuit/cookies (about 1 ½ cups).
2 tablespoons white sugar.
5 tablespoons margarine or butter, melted.
Filling:
2 pkg. (8 oz. each) cream cheese, softened at room temperature.
2 eggs.
½ teaspoon vanilla.
2/3 cups white sugar.
Bake at 325 F for 20-22 minutes.

Baking Supplies.
* Cupcake liners red foil or paper (I prefer foil).
* Muffin tin cupcake pan standard size.
* Cheesecake Filling: cream cheese (I use Philadelphia cream cheese), sugar, lemon zest (rind),vanilla extract or vanilla bean paste, eggs, sour cream and salt.
* Crust: graham crackers / graham cracker crumbs, sugar white granulated, unsalted butter, salt.
* Topping: For this recipe demonstration I used strawberry and raspberry jam, and topped each cake with a sliced, fresh strawberry and some blueberries..
** Note: Fruit pie fillings (Cherry, berry, or any fruit), preserves, and jellies, also make easy toppings..

Slide the pans carefully into a preheated oven at 300 degrees Fahrenheit. Bake for approximately 20 minutes, until the cheesecakes are mostly set but still slightly jiggly in the middle. Remove them from the oven and let them set for eight to 10 minutes, then remove the cups from the muffin pan and place them on a rack to finish cooling.In a medium bowl, cream together the cream cheese and 1 cup of sugar.
Stir in the eggs one at a time, then mix in the vanilla. Spoon into cupcake pans.Preheat oven to 325º and line two 12-cup muffin tin with 16 paper liners.
Spray liners with cooking spray. In a large bowl, combine crushed graham.Make sure to scrap the sides of the bowl. Pour cheesecake mixture into cooled muffin tin (about 2 tablespoons of filling each.) Fill almost all the way to the top. Bake: Place in the oven and bake for 20 minutes or until the cheesecakes are set.
BAKE Divide cream cheese mixture between the lined cupcake molds. Fill almost to the top. Bake in the oven preheated to 355° F (180°C) for about 20 minutes, or until slightly risen.Stir in the additional egg yolk, cream, and vanilla.
Pour the batter over the crust, and rap sharply on the counter a few times to release any air bubbles. Bake for 30 to 35 minutes, or until the mini cheesecakes are set around the edges but still a little wobbly toward the centers.Insert the foil liner in the pan and press the graham-cracker crust into it. Pour the batter in the pan until it reaches about 1/4 inch from the lip. Bake the cheesecake for 40 to 45 minutes; then insert a toothpick in the center to check for doneness.
Let the cheesecake cool and place it in the refrigerator until chilled.Use a little more than 1 Tablespoon of both the crust and batter in each mini cheesecake. Like the big version, pre-bake the crust and make sure your cheesecake batter ingredients are at room temperature. Bake the cheesecakes in a standard 12-count muffin pan. There’s no need for a springform pan and no need to mess with a water bath.
Just set the cheesecake in a roasting pan or other large baking dish, fill it with a few inches of water, and put the whole contraption in the oven. Wrapping the cheesecake pan in foil also helps keep any water from seeping.No bake cheesecakes, baked cheesecakes, cheesecake cupcakes, cheesecake brownies, mini cheesecakes or cheesecake cheese ball — just give me all the cream cheese-based desserts and no one gets hurt.
